CROSTINI are crisp rounds of toasted bread, flavoured with garlic and olive oil. Ideally, for the true authentic
touch use Italian Ciabatta. They are ideal for hot and cold snacks, topped
with anything from Parma ham, sun dried tomatoes, wild mushroom and cheese, roasted pepper strips and pesto, to bacon or anchovy pieces. Serve crostini for a fuss-free starter, light lunch or for nibbles with drinks.
Mixed Grilled Vegetable CrostiniIngredients:
2 garlic cloves Method: Preheat the oven to 375 degrees. Place the garlic cloves and the oil in a saucepan to flavour the oil, heating gently for 1-2 minutes. Be careful not to burn the garlic and discard when finished. Cut the bread into 1/2-inch-thick slices, brush with the garlic oil and toast in the oven for 10-12 minutes or until gold, turn the slices halfway through the cooking time. Set the bread aside. Do not cover. Slice vegetables lengthwise in 1/2inch thick slices. Brush them with the remaining oil and grill on both sides until lightly charred. Take care to get the cooking times right as the vegatables should remain crisp. Remember some vegetables take longer than others. Cool the vegetables before chopping and tossing them in a bowl with the herbs, vinegar and salt and pepper. Serve on the garlic crostini with some cracked black pepper and the shaved Parmesan cheese. Serves 6 |
